Objectives :

- To understand the basics of the wine-making process (grape to wine)
- To understand the impact enological (wine-making) practices have on the final characteristics of wine.
- To gain an understanding of the major types of winemaking (vinification) management by type of wine

Contents :

Semester 1:
1. Microbiological phenomena and how to control them
2. Composition of the raw material and changes during the winemaking (vinification) process.
3. Various wine aromas
4. Red and white vinification to obtain a dry wine

Semester 2:
1. Vinification of sweet white wines
2. Maturing wine
3. Vinification of sparkling wines
4. Wine clarification and treatments
5. Wine stabilization – modifying the product
